Apple Aïoli

INGREDIENTS
1 Golden Delicious apple or Granny Smith1 tablespoon Dijon mustard
2 tablespoons chopped garlic
Salt and freshly ground white pepper, to taste
Dash of Tabasco sauce
½ cup olive oil
PREPARATION
1. Peel and core the apple. Cut it into thin slices, then place in a saucepan with ¼ cup water. Cover and bring to a boil, then cook for 2 minutes. Let cool.2. In a blender or food processor, combine the cooled apple and juices, mustard, garlic, salt, white pepper, and Tabasco. While processing, add the olive oil quickly--within about 30 seconds--until the aioli is of fine texture. Check for seasoning and serve cool.
