Tomato Sauce

This Tomato Sauce goes well with Pierre's Meat Loaf with Mushrooms.

INGREDIENTS

1 ¼ pounds red, ripe tomatoes, peeled and seeded, or use an equal amount of drained canned, crushed tomatoes
3 tablespoons butter
⅓ cup finely chopped onion
1 teaspoon finely minced garlic
Salt and freshly ground pepper

PREPARATION

1. Cut the tomatoes into cubes. There should be about 2 cups.
2. Melt 1 tablespoon of butter in a saucepan and add the onion and garlic. Cook, stirring, until wilted. Add the tomatoes and salt and pepper to taste and bring to a boil. Let simmer 10 or 15 minutes. Swirl in the remaining butter and serve.

YIELD

About 2 cups
