Avocado and Tomato with Lime Sauce

The smooth texture of an avocado makes a natural foil for Chili à la Franey and the onion and tomato salad is a perfect accompaniment. An alternate way to serve: cut each avocado in half, remove the pit, and place each half on individual plates spooning the onion & tomato salad in the indented middle of the avocado.

INGREDIENTS

1 large unblemished, ripe but firm avocado
1 red, ripe tomato
1 small red onion
2 teaspoons finely chopped garlic
3 tablespoons fresh lime juice
1/4 cup olive oil
1/2 teaspoon freshly ground coriander seeds
Salt and freshly ground pepper
1 small, fresh, hot green chili, seeded and chopped, optional
Lettuce leaves

PREPARATION

1. Cut the avocado in half. Discard the pit. Peel the avocado and cut it into one-inch cubes. Put the cubes in a mixing bowl.

2. Core the tomato and cut it into one-inch cubes. Add it to the bowl.

3. Peel the onion and cut it into half-inch cubes. Add it to the bowl. Add the garlic, lime juice, olive oil, and salt and pepper to taste. Add the hot chili. Toss and chill.
